Courgette Cake by Litsa Kwantes

Ingredients:

  • 5 eggs
  • 1 cup milk
  • 1 cup sunflower oil
  • 1 teaspoon baking powder
  • Pinch of salt
  • Feta cheese
  • 1 zucchini
Instructions:
  1. Grate the courgette using a grater and squeeze out excess moisture. In a large mixing bowl, beat eggs until well combined. Add milk and sunflower oil, whisking until thoroughly mixed.

  2. Sift in baking powder and add a pinch of salt. Stir until fully incorporated. Crumble or chop feta cheese into small pieces and mix into the batter.

  3. Grease a cake or tart pan with a little oil. Pour the batter into the prepared pan, spreading it out evenly. Bake for about 45 minutes, or until golden brown and a toothpick inserted into the center comes out clean.

  4. Let the cake cool in the pan for a few minutes. Carefully remove the cake from the pan and transfer it to a wire rack to cool completely. Slice into wedges or squares and serve warm or at room temperature
