Courgette Cake by Litsa Kwantes
Ingredients:
- 5 eggs
- 1 cup milk
- 1 cup sunflower oil
- 1 teaspoon baking powder
- Pinch of salt
- Feta cheese
- 1 zucchini
Instructions:
- Grate the courgette using a grater and squeeze out excess moisture. In a large mixing bowl, beat eggs until well combined. Add milk and sunflower oil, whisking until thoroughly mixed.
- Sift in baking powder and add a pinch of salt. Stir until fully incorporated. Crumble or chop feta cheese into small pieces and mix into the batter.
- Grease a cake or tart pan with a little oil. Pour the batter into the prepared pan, spreading it out evenly. Bake for about 45 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for a few minutes. Carefully remove the cake from the pan and transfer it to a wire rack to cool completely. Slice into wedges or squares and serve warm or at room temperature
